Smoked Tasmanian eel, crispy artichokes, fresh mint, confit celeriac
Southern ocean Blue Eye Trevalla, celeriac chips, caramelized aubergine
Hot smoked locally farmed pork shoulder, braised red cabbage, onion puree
Cape Grim beef cheek, slow cooked with shallots, baby root vegetables & red onion marmalade
